Looking for the best hotpot in Shanghai? Wulou Hotpot in Xintiandi is one of our favourite places in the city for Sichuan-style hotpot—and it is not only because of the food.
The restaurant combines a seriously good spicy broth with excellent ingredients, attentive service and a dining experience that feels more considered than your average hotpot meal. You can see exactly what type of beef you are eating, while the shrimp that arrive live at the table before being cooked are super fresh and tasty.
As expected from Sichuan hotpot, the broth is rich, spicy and full of flavour. The heat builds gradually, so this is a restaurant for people who genuinely enjoy chilli, peppercorns and the distinctive numbing quality of Sichuan cuisine.
If you prefer less spice, ask the staff about a milder broth or a split pot. However, the spicy broth is the reason to come here.

Quality ingredients
One of the best aspects of Wulou Hotpot is the attention given to the ingredients.
The beef is presented in a way that allows you to see which cut or type of beef you are ordering. This makes the meal feel more transparent and helps you understand what you are paying for.
The shrimp are also brought to the table live before being cooked. It is an impressive touch and adds a sense of theatre to the meal— if you're familiar with China you will know this is common and is seen as a good thing as you can't get any fresher than that! Although it may not be for everyone...
The focus is clearly on quality rather than simply filling the table with a huge number of inexpensive ingredients. The beef and seafood are the highlights, but the usual hotpot additions are also available for building a full meal around the broth.

Food and flavour
The Sichuan broth has the intensity you would expect: spicy, aromatic and layered with chilli and Sichuan pepper. It is the kind of broth that keeps you going back for another bite, even when the heat starts to build.
For the best experience, order a mixture of:

- Mushrooms.
- Tofu or tofu skin.
- Noodles or another filling final ingredient.
The best way to eat hotpot is to avoid cooking everything at once. Add ingredients in stages, most people add meat first and then fill up on noodles towards the end.

The service was one of the most impressive parts of the meal. The staff were attentive, helpful and engaged without making the experience feel rushed.

My verdict: One of the best hotpot restaurants in Shanghai and my personal favourite.
